The Schwarzer Hahn: Palatinate Star-Cuisine with a Modern Touch
In the heart of Deidesheim lies the Deidesheimer Hof, one of the most traditional establishments in the Palatinate. Its gourmet restaurant, the Schwarzer Hahn, combines classic haute cuisine with modern ideas and a deep connection to the region.
The kitchen is led by Stefan Neugebauer and Felix Jarzina. Their shared motto is "Creativity with Down-to-Earthness": tried-and-tested techniques form the foundation, while seasonal products and contemporary accents ensure constantly new taste experiences. The Schwarzer Hahn has been awarded a Michelin star and 17 points in the Gault Millau.
The dishes are served in the historic vaulted cellar of the house. In addition to multi-course menus, selected à la carte dishes and vegetarian compositions are also on offer. Despite the high culinary standards, the atmosphere is deliberately kept relaxed to enable an introduction to the world of top gastronomy.
All three Chazánte cuvées are available at the Deidesheimer Hof: Imperial Grey, Sencha Épicé, and Oolong Orange. This allows for a different non-alcoholic accompaniment to be chosen depending on the dish and occasion – from spicy and herbaceous to floral-fruity, all the way to the delicate bergamot notes of Imperial Grey.
Imperial Grey plays a special role during the traditional fish weeks. Their culinary highlight is a grand fish menu at the Schwarzer Hahn, where, among other things, crustaceans, sole, and monkfish are served in refined compositions. The freshness of the bergamot and the delicate structure of the Earl Grey tea make Imperial Grey an elegant non-alcoholic accompaniment to fish and seafood.
For us, it is something special to know Chazánte in a place where Palatinate hospitality, artisanal precision, and a modern idea of enjoyment come together.
